Avocado Chicken Salad

Avocados are often referred to as the “perfect food”  because of their amazing health benefits:  high content of potassium and of essential vitamins and minerals, lowers cholesterol, regulates blood sugar levels, promotes healthy bones, high fiber… the list goes on and on.  And let’s not forget, avocados are just plain yummy!  I’ve created a chicken salad with an avocado “boost” that is satisfying, delicious, easy to make and extra healthy.  Enjoy!


 

AVOCADO CHICKEN SALAD

INGREDIENTS (serves 4):

2 boiled chicken breasts in strips

3 diced tomatoes

1/2 shredded carrot

6 diced heart of palms

3 avocados cut in half (keep the rinds to serve)

1/2 onion finely chopped

1/2 cup of chopped cilantro

1 tbs of cream cheese

2 limes juiced

1/2 cup sweet corn

1 diced cucumber

2 lettuce heads


PREPARATION:

Finely chop the lettuce and set aside.

Make guacamole by mashing the avocados combined with the cilantro and onion.  Add the chicken strips, cream cheese, juice of 2 limes, sweet corn, salt and pepper to the guacamole and mix well to form a smooth mixture.

Fill the half avocado rinds with the chicken salad.

Serve the stuffed avocado rinds over a bed of lettuce along with the other salad ingredients and your choice of dressing.
