Rice Pudding with Caramel Coffee Sauce

Who doesn’t love some creamy, soothing rice pudding?  It is one of my all time favorite comfort foods.  The ingredients are simple and the process is easy, which reminds me of a quote by Julia Child:  “You don’t have to cook fancy or complicated masterpieces- just good food from fresh ingredients”.



1/2 cup uncooked rice

4 1/4 cups milk (1 liter)

1 cup condensed milk

1/4 bar of butter

4 tbs sugar

1/2 tbs cinnamon

1/2 tbs orange zest


Coffee Caramel Sauce

1 cup evaporated milk

3 tbs sugar

1 tbs vanilla extract

3 tbs instant coffee


In a pot, place the rice,  1 cup of water and the cinnamon over high heat.  Bring the water to boil and add the remaining ingredients at medium heat while stirring.  Cook for approximately 20 minutes at low heat until the rice is cooked and the pudding becomes thick and creamy.

For the sauce, add all the ingredients in a pan over medium heat and whisk until it thickens.


To serve, add a layer of the sauce on the bottom of a dessert bowl, followed by a scoop of rice pudding, and top it off with a drizzle of sauce and garnish with mint leaves.
