Aztec Soup is found throughout Mexico, served everywhere from 5 star restaurants to traditional street stands. The ingredients are simple, yet the combination makes for a soup that is as tasty as it is colorful.
Ingredients: (serves 4-6) 4 tomatoes, 1 onion, 1/2 carrot, 3 garlic cloves, 2 cups of chicken broth, 3 avocados, 5 corn tortillas, 1 cup grated cheese, 1/2 cup chopped cilantro, salt and pepper.
Directions: Chop the onion, garlic, tomatoes and carrot. Drizzle olive oil in a pot and put the ingredients in.
Stir fry over medium heat until the tomatoes soften and come apart, then add the chicken broth and cilantro. Bring to boil for 10 min.
Pour into the blender and liquify, then place over medium heat for another 5 minutes, adding the salt and pepper.
Tortilla Strips: Cut the tortillas into thin strips. Place 1/2 a cup of olive oil on a skillet over high heat.
Once the oil is very hot, add the torilla strips until golden brown. Set the strips over a paper towel to absorb the extra oil.
To serve: Top with chopped avocado, tortilla strips and grated cheese.
Add hot sauce for a kick and pair with an ice cold beer!
