Mexican Fiesta! Chimi-Churri, Cajun Chips & Passion Margaritas

Olé! Chimi-Churri is a quick and easy dip that you can keep in the fridge and just add to tacos, burritos, salads, or serve with chips, preferably homemade.  Our homemade chips are honestly one of the most delicious I’ve ever tried and probably the healthiest.  No added oil, baked, and just simple, natural seasonings.  And to top off our Mexican party, how about our signature Impassioned Margarita… Oralé!

Ingredients- Chimi-Churri: (serves 5) 2 large, ripe tomatoes, 1 large onion, 1 bell pepper, 1/2 cup chopped cilantro, 5 limes, salt and pepper to your liking.

Procedure:  Chop tomatoes into small cubes, finely chop onion and bell pepper, squeeze the lime juice from 5 limes limes, mix all ingredients together.  Add tabasco or hot peppers for spicier version.

Cajun Chips: 1 bag of white flour tortillas,  cajun, salt, pepper.  Procedure: cut tortillas into triangles (like a pizza), spread on a baking sheet and season with cajun, salt and pepper.  Place in the oven at 350 F for approximately 10 min, until golden and crispy.

Passion Fruit Margarita: tequila, orange liquor or triple sec, 1 passion fruit.

Procedure: in the blender, liquify the pulp of the passion fruit with a few table spoons of water to make the juice.  Mix 2 parts tequila, 1 part orange liquor or triple sec, 2 parts passion fruit juice.
